What sets it apart
At 0.19% free acidity, Paliovarvassena sits more than four times below the European limit of 0.8% for an extra virgin olive oil: the lowest acidity of our cuvées. Its 374 mg/kg of polyphenols is 1.5 times the 250 mg/kg threshold of the European health claim. The independent laboratory's full reports, using the official International Olive Council method, are published on our Analyses page.
One grove, one year
At Oikos Antalis, each cuvée bears the name of its grove and is never blended with oil from another estate. In a year without harvest, the cuvée does not exist: we never buy another producer's oil to sell under our name.
Frequently asked questions
What does Paliovarvassena olive oil taste like?
A clear, delicate oil: fennel, aniseed, maquis herbs and red chilli. The moderate bitterness quickly softens beneath the aniseed aromas; the finish is lively and peppery. It suits sun-ripened vegetables, carpaccios and summer salads.
Can I adopt an olive tree at Paliovarvassena?
Yes, with La Récolte at €250 a year: a tree in your name, a plaque on the tree, six 500 ml bottles of the estate's oil and its laboratory analysis.
