Craftsmanship and the culture of taste: olive oil past and present, Mediterranean terroirs between heritage and standardisation, taste the old way — and the singular productions of the old world and the new.

The “Signature” Tasting

One variety, multiple origins: a guided comparative tasting of a single variety — Koroneiki, Frantoio, Arbequina — across its origins. The influence of origin, the diversity of aromatic expression, the notion of a sensory signature.

Sensory Memory

With Gabriel Lepousez. Scent, taste, texture and emotion build lasting memories: through neuroscience, participants discover how the brain records and interprets sensation.
